
Ramon Jané began one of my favourite Spanish producers Mas Candi in 2006 with his amigo Toni Carbó, using their family’s vineyards to produce their own wines which was something out of the ordinary as the tradition as to sell all their grapes to large Cava Houses. Cava in Spain, is the Spanish way of making sparkling wine in exactly the same way as Champagne- the only exception is that winemakers choose to use Native Spanish grapes like Xarelo, Macabeo and Parraleda.
Ramon branched out in 2016 to make wines under his own name to celebrate and embrace the beauty and wonder of natural wines. Wines made with no manipulation in the winery and no additions at all. Think PURE GRAPE JUICE made from NATIVE grapes, WILD FERMENTED and zero added sulphites to the final juice. Another feather to his bow is his determination to revive almost extinct native grapes!
Simple. Thirst Quenching. Satisfying. This wine is made from white native grapes macabeo & xarello which are two of the grapes also used in Cava ( Spains offering of a wine made in the same way as Champagne) so think of it as a cheeky pet nat cava?! I would recommend buying a bottle of the Baudili still wine with this as it was used as the base wine for this pet nat and would be a great little experiment to taste both side by side. A dry, generous wine with apple, melon, just ripe pear and zesty pink grapefruit acidity bringing it all together.
